INGREDIENTS:
- 400g seedless tamarind paste
- 350g cane sugar (or more depending on taste)
- 640 ml water
PREPARATION:
In a saucepan put the tamarind paste and 400 ml of water and let it soak for 1 hour.
Then set to cook on low heat and add the sugar and stir slowly.
After 10 minutes put the remaining water and continue to stir occasionally for another 10 minutes. Taste and add more sugar if you like it very sweet, then cook the tamarind sauce for another 10 minutes and remove the tamarind sauce from heat and let it cool completely before serving
You can eat it like jam, add some water to make tamarind syrup and tamarind sorbet or eat it with a fruit salad or pickled mango and pineapple.
