INGREDIENTS FOR 2 PEOPLE:

  • Mines ( fresh noodles ) 250 g, can be replaced by fresh spaghetti.
  • A quarter of a white cabbage
  • 2 carrots
  • 1 chicken breast
  • 1 egg
  • Chinese chives ( this is different from the chive which is a flat herb )
  • Dark soy sauce
  • white wine
  • A clove of garlic
  • vinegar
  • A teaspoon of sugar

PREPARATION:

Peel the carrots and cut them into small sticks , chop cabbage and set it aside. Cut chicken into pieces and add pepper. Cook the noodles for 2 minutes in a pot of boiling water then rinse them with cold water and reserve.

Heat a pan with very little oil in it and break the egg inside, cook it like scramble eggs and once cooked set aside and saute the chicken until golden browned , put the carrots to cook for 2 minutes then add the cabbage and let it cook for 2 more minutes.

Add a little soy sauce then put in the pan the noodles and the chives, mix well to cover the noodles with the soy sauce, add even a little soy sauce if the noodles are not “dark” enough.

Once the noodles are well blended with the chicken mixture pour a little white wine and let it stir for a few seconds, your Mine Frire are ready.

FOR THE GARLIC SAUCE :

Simply crush the garlic mixed with a little vinegar, some water, a teaspoon of sugar and a pinch of salt, it will be the sauce for noodles.

While serving put a spoon of scramble eggs on each noodle dish and sprinkle with garlic sauce.
